2018 Blanc de Blancs
Sparkling Wine
The cool coastal climate of Jespersen Ranch is ideal for producing sparkling wine, and in 2018, we started the labor-intensive process in the vineyard. This was our first Blanc de Blancs, and we chose to source it exclusively from a single block of Chardonnay known for its lower acidity, and great flavor. We hand-harvested the grapes at low brix and gently pressed the clusters before fermenting in stainless steel and neutral oak. The wine was bottled with yeast and sugar for its second fermentation (tirage), then aged on their side for 35 months before being hand-riddled and disgorged with a dosage of 4 g.l (brut) in May 2022. The extended tirage aging and dosage softened the high natural acidity in the base wine and led to a beautifully integrated sparkling wine. It’s fresh and clean with notes of mandarin, white flowers, honey, a hint of brioche, and would be a perfect accompaniment to your holiday tables. Drink now through 2030.
