We farm 10 acres of Syrah at Heart Hill Vineyard. We hand-harvested and de-stemmed the grapes, saving about 20% of the stems. The berries were lightly crushed and put into stainless steel tanks for a long and slow fermentation. We sun-dried the stems for a few days and then incorporated them back into the tanks. This technique lends an interesting layer of spice to the fresh fruit flavors that Syrah is renowned for. The wine was aged in a variety of French Oak barrels for 21 months before being bottled. Early Maturity - decant to drink now or age an additional 5+ years in your cellar.
