2019 Brut Cuvée
The cool climate and ocean influence at Jespersen Ranch provides a remarkable setting for Sparkling Wine. We use the 'Méthode Traditionnelle' which is how the great Champagnes of France are made.
In 2019 we hand harvested Chardonnay and Pinot Noir early in the morning on September 4th. After whole-cluster pressing the grapes we fermented the wine in a combination of stainless-steel and neutral oak barrels. We bottled the base wine and aged it 'in tirage' (in bottles) for 35 months. In April 2023 we hand-riddled and disgorged each bottle and added a 'dosage' (sugar/water mixture) of 6 g/l.
This is a dry, show-stopping Sparkling Wine. It's a balancing act of flavors: honeyed lemon contrasted by white lime flowers; marzipan notes complemented by an oceanic minerality. The extended tirage aging created layers of flavor and complexity that make this wine a delight to pop and pour. Drink now through 2033.
