2019 Reserve Cabernet Sauvignon

The base of this wine is made up of a co-fermentation of Cabernet Sauvignon and a small amount of Cabernet franc, which added long, persistent tannin structure to the finished wine. We pursued a relatively hot and short fermentation using pump-overs as our primary extraction tool. After 10 days, we pressed the grapes and aged the wine in standard oak barrels for 20 months. We used a barrel chosen specifically for the spicy tones it lends to the wine. This wine embodies the classic characteristics of east-side Paso Robles Cabernet Sauvignon with a combination of both fruit (raspberry) and spice (anise).
