2020 Blanc de Noirs Brut
Sparkling Wine
Each year we produce just 200 cases of an estate grown and bottled Sparkling wine. This labor-intensive process starts in the vineyard, hand-harvesting clusters at low brix. The cool coastal climate of Jespersen Ranch is ideal for producing a Sparkling wine and in 2020 we picked our Pinot Noir grapes in the morning fog on August 20th.
To make our base wine we gently whole-cluster pressed the Pinot Noir grapes. The majority of the juice was fermented in a stainless steel tank and a quarter of it was natively fermented in neutral French oak barrels. After nine months we bottled the wine and aged it en tirage (on the lees in the bottles) for 39 months. We strive to make a complex, layered Blanc de Noirs style Sparkling and this lengthy aging process elicits a delicate creaminess and brioche flavors.
In August 2024 we hand-riddled, disgorged and corked the bottles. Our dosage was 7 g/L, making this a Brut (dry) wine. Aromas of lily and jasmine evolve into vibrant flavors of lime and mandarin, and a clean, mineral finish. The naturally high acidity and delicate flavors of this Sparkling make it a beautiful companion to your favorite dishes (we love it with appetizers, seafood or brunch). It would be a perfect accompaniment to your holiday tables.
