This wine embodies the bold, opulent spirit for which Westside Paso Robles Cabernet Sauvignon is celebrated. After hand-harvesting and carefully destemming the fruit, we fermented the deeply colored juice in stainless steel, allowing a long, gentle maceration to draw out its full depth of hue and flavor. The wine then rested in French oak barrels for 18 months, after which only 16 of 180 barrels were chosen for a final blend—aged an additional 8 months to achieve perfect harmony. The result is a rich, layered expression, with silky tannins and a graceful balance of ripe cherry, dark cocoa, and cedar.
