This wine shows the powerful, opulent nature that Westside Paso Robles Cabernet Sauvignon is renowned for. After hand-harvesting and destemming the grapes, we fermented the deeply hued juice in stainless steel tanks. A long, slow maceration maximized color and concentrated flavor. We aged the wine in French oak barrels for 18 months before selecting just 16 of the 180 barrels of Cabernet Sauvignon to blend and age for an additional 8 months before bottling. It’s rich and layered with elegant tannins and a beautiful balance.
