We farm Sauvignon Blanc at Jespersen Ranch in the Edna Valley. The vineyard is located in the northwestern corner of the valley just four miles from the ocean. Our three acres of Sauvignon Blanc thrive in the coastal environment and derive their character from the rolling banks of coastal fog in the morning and ocean breezes in the afternoon.
This is always one of the most aromatically expressive whites that we make and the mouthwatering acidity and lush, tropical fruit flavors are a beautiful showcase of the cool-climate site. This is definitely a wine that will grab your attention!
We hand-sorted and lightly whole-cluster pressed the grapes into a combination of neutral oak puncheons and a stainless steel tank for fermentation and aging. The wine did not go through malolactic fermentation, keeping the acidity bright and focused. It aged for five months prior to being bottled.
